Mother’s Day Charbroiled Oysters

Ingredients:

The quantity depends on the amount of people you want to serve.
  • Parsely, chopped
  • Oysters, large freshly shucked
  • Magic sauce
  • Pecorino Romano cheese, grated
  • French Bread, cut in half
  • Lemon wedges
For The Sauce:
  • Pecorino Romano, grated
  • Butter, unsalted, soft
  • Garlic, minced
  • White pepper
  • Black pepper
  • Cayenne pepper
  • Parsley, chopped
  • Lemon juice
  • Salt
Method:
  • Combine all the ingredients in a bowl and whisk them together for some time.
  • Now you need to reserve it at room temperature grilling it.
  • Well, now the main part of cooking the recipe goes. First of all you need to heat your grill and get it as hot as possible. Yes, you read it right. You need to get it as hot as possible.
  • Now you need to be very careful. Okay do not get nervous. First, shuck oysters and do not lose any of the juices. If you do, then you might not be able to enjoy the dish the way it should be enjoyed.
  • Next you need to place shell side down on the hottest part of the grill.
  • Now, allow the oysters cook in their juices till the edges begin to bubble. Keep doing it for 2-3 minutes.
  • Then, add a scoop of sauce to the top of each oyster to the rim of the shell. Now since the sauce begins to bubble and the edges start to brown, top with a drizzle of cheese and cook for another minute.
  • Next you need to carefully remove the oysters from the grill and top with parsley and serve immediately.
  • Finally you need to serve with a side of lemon wedges and French bread to soak up any and all of the delicious juices.

Delicious Oceanic Treats For Birthdays

Birthday parties go really well with seafood. These days, people are skipping regular menus and resorting to seafood just to add a flavor to the celebrative mood. Even I believe, to some extent good food has a lot to do with making someone happy; so why not seafood? 

When someone is bored of regular recipes, he/she quickly needs a shift. In fact my son Joshua, had told me to prepare something different this time for his birthday party; after all, we had invited his school friends and he wanted me to prove how well his mother really is, at cooking seafood cuisines. 

I was pretty nervous at first because I was not quite acquainted to seafood recipes; I have hardly prepared them in my own kitchen; but thanks to the online seafood recipes. They were a great help for me. 

While reading about seafood recipes for a birthday party I had chanced upon a preparation on crab meat and Asian herbs. I was quite sure that Joshua and his friends would love to taste the succulent and delicate crab meat enveloped inside a golden omelet. I had to first collect the ingredients which included the following: 

·         Green chilies (de-seeded and halved), 1
·         Crabmeat (cooked), 1 cup
·         Grated ginger, 2 tsp
·         Pea sprouts (trimmed), 1 cup
·         Spring onions (thinly sliced), 6
·         Fish sauce, 1 tsp
·         Soy sauce, 2 tsp
·         Eggs, 3
·         Oyster sauce, 2 tbsp 

Firstly, I took a bowl and then mixed the crab meat with ginger, ½ chili and ½ spring onions. After this, I had set them aside. Then I kept the remaining portion of the chopped chili and placed it inside a bowl. I had also added the remaining part of the spring onion along with the sprouts and then, again I had to set this mixture aside. 

Meanwhile, I had to slightly beat the eggs along with the fish sauce and soy. Next, I took some oil in a skillet and brushed it thoroughly. After the oil got heated, I had to add the eggs and had to gently stir them with a fork (note: I had used the underside of the fork). As the egg got cooked, I had to ensure that it remained soft. After taking out the cooked egg from the skillet I had to pour the crab meat mixture just at the centre of it. Then, I rolled it up and sliced it from the middle. I had also poured some oyster sauce on it and garnished it with sprout mixture. 

After, the Asian crab omelet, I had to prepare mussels with green onions and ginger. Josh had told me that his friends were head over heels for it.  The mussel recipe needed the following ingredients:
  • Medium sized ginger (peeled and finely shredded)
  •   Chinese 5 spice, ½ tsp
  • Sesame oil, 1 tsp
  • Thin slices of a garlic clove
  •  Trimmed and sliced green onions
  • Soy sauce (dark), 2 tbsp
  • Chicken stock, ½ cup
  • Peanut oil, 2 tsp
  • Brown sugar, 1 tbsp
  • Trimmed choy sum, 2 bunches
  •  De-bearded and scrubbed black mussels, 2lb
Firstly I took a wok and placed it on high flame; then I added oil. After this I had added the five spices, garlic and ginger and also ½ green onions into the oil and stirred the ingredients for a minute. Later on, I poured the soy sauce, wine, sugar and chicken stock and brought the mixture to a boil. After this, I added the mussels and covered the wok for about 3-4 minutes. After the mixture got cooked I transferred the entire of it in a bowl. 

After some time, I had to add the peanut oil in the wok and heat it over high flame. Next, I added the choy sum and stirred to fry the same. I also took some shallow bowls where I had placed choy sum and had topped it with cooking liquid and mussels. I had also sprinkled the leftover green onions over the food.

Celebrate Some Lavish Moments with Your Partner over an Extravagant Lobster Dinner Menu



Tomorrow it’s going to be our 5th wedding anniversary and I am really excited that we have finally made it through 5 odd years of our life. No!! I have not forgotten the happy moments though; because spending time with him has always been happier. Even till date I get so engrossed in his words that at times he tells me “Goodness Nicole!! You are still that high school girl I had found 7 years back”. He is my love; life seems empty without him. 

For the past four years he has been taking me to restaurants; I have seen the bills and they were so huge that I would tell him not to empty his pocket over such extravagant orders. I have known Freddie for quite some time now and I know that he has a habit of indulging in overgenerous buys.  Tomorrow it is going to be special because I am going to prepare everything at home and I am not going to speak a word about it until he discovers it for real.

Oh!! I am so excited to think that Freddie and I are going to enjoy a seafood platter tomorrow. It has been quite a while that he has been insisting me to prepare lobsters for a fine dining moment. Yes!! I am going to gift him a never-before dining memory with my own culinary expertise. 

What am I going to prepare? Though, the lobsters have already been delivered, I am quite excited about the preparations. To start with, herbed lobster roll will be perfect. The refined taste of Maine lobster is best tasted with fresh herbs and creams. Now, for the main course, I am thinking that I may add lobster tails in the menu alongside a Lobster Paella or the classic Jambalaya. 

I have started feeling confused because I have stumbled upon a host of super tasty lobster recipes that also include lobster bisque and lobsters with Chinese vegetables; an absolutely Asiatic indulgence. Oh!! And I am also not ruling out the Spanish poached lobster from the menu. Yes, I am going to try out lobster dinner recipes for two of us. 

A few minutes ago I was thinking whether it would have been better if had gone for luxury lobster dinner for two. Well!! I seem to have made up my mind that no matter what I will treat him with lobsters prepared solely by me. May be I will try the exotic dinner choices, at a later date.

There are various ways in which you can cook lobster. You can steam them, bake them, grill them and prepare them in different ways. One of the tastiest portions of a lobster is its tail. Therefore if you really like lobsters you must try out lobster tail recipes. 

Cooking lobsters is now easier than you thought it would be.  You can now whip up lobster tails and fresh new recipes in your very own kitchen. All you have to do is follow a recipe and use good lobsters to make them.  Here are a few recipes you can try and make all by yourself. Now you do not have to go to the restaurant every time you want to savor the delicate taste of lobsters. Just follow a few easy recipes. Here’s how you can make a good Steamed Lobster Salad.

You will require:

  • 1 sliced red onion
  • 2 steamed, medium sized lobsters
  • 2 sliced ribs of celery
  • 1 pound of overripe tomatoes
  • 2 cloves of sliced garlic
  • ½ a cup of virgin olive oil
  • 20 leaves of mint
  • 15 leaves of basil
  • 1 lemon, juiced
  • 1 fistful of washed and dried arugula
To prepare this fresh recipe first, take the lobster meat of the lobster and slice them into pieces of size ½ inch. Then mix the lobster with the rest of the ingredients in a medium sized bowl and season it as per your requirements. Serve this on some lettuce and enjoy the salad.

If you want to prepare lobster tails in a different way, you can try making A Lobster Tail and Prawn Salad with Green Mangoes and a Chili-Lime Dressing. For this dish you will require:

  • The juice of 2 limes
  • 2 minced chilies
  • The juice of 1 lemon
  • White pepper, freshly ground and salt
  • 2 cups of olive oil, extra-virgin
  • 4 peeled and julienned mangoes
  • 12 peeled, deveined and cooked prawns
  • 3 shelled and cooked Maine Lobster tails, cut lengthwise
  • 4 ounces of fresh julienned snow peas
  • For garnish julienned and fried leeks and chopped cilantro
To make this fresh dish, first, make the dressing by mixing all the ingredients in a blender. Then place it in a bowl. Toss in the mangoes and then, serve the mango salad on chilled plates. Top each serving with 2 prawns and ½ a lobster tail. Garnish with fried leeks and cilantro.
These two dishes make yummy appetizers and can also be served as an entrée. They are fresh and delicious.

Simple yet Yummy Seafood Ideas for You

Seafood was never my cup of tea until Mom had asked me to prepare some of them. Oh no!! I was so disgusted with these slimy sea-creatures that I had to directly refuse her. She started scolding me and had said that there was no way to escape the horror. Horror? Now, many of you must be thinking that I am some kind of a crazy person who has little knowledge about seafood and how they tend to taste. 

Actually I admit of being little crazy at that point of time. Well!! This was mainly because I was bit inclined towards beef, bacon and turkey… I had tried them in the kitchen but had rarely handled lobsters, crabs, shrimps, prawns, mussels and clams. 

Now, let us come to the point where my culinary experience with seafood had begun. I was busy obeying mom’s instructions and later on when I completed my cooking I had to taste them. Guess what? I had once again discovered my culinary skills. 

Yes, today, I kind of proclaim myself a good chef, especially when it comes to cooking exciting seafood recipes. Actually it’s not only me; even you can enliven your culinary experience with seafood recipes. Here I am going to share with you a couple of interesting recipes that are worth a try: 

Cajun Magic

Okay this is absolutely a wonderful shrimp recipe you are going to relish; you might try it for your weekend dinner. 
  •  Butter, 1 cup
  •   Minced garlic cloves, 2
  •   Chopped onion, 1
  • Black pepper, 1 tsp
  • Crushed red pepper, 1 tsp
  • Rosemary, ½ tsp
  •  Thyme, ½ tsp
  • Worcestershire sauce, 1 tsp
  • Beer, ½ cup
  • Chicken broth, ½ cup
  • Large shrimps, 1lb
  • Cooked rice

Take a skillet and melt ½ the amount of butter in it. Excepting chicken broth, add other ingredients to the skillet along with onion and shrimps. Stir constantly while you cook for a minute. Now, add chicken broth and remaining butter into the skillet. Take 2-5 minute of time to cook. Stir in the beer and continue cooking until, the shrimps are done. Now, serve Cajun shrimp with rice. 

Garlic white mussels 

This simple to cook recipe tastes yummy
  • Chicken stock, ½ cup
  • White wine, 1 cup
  • Parsley for flavor
  • Garlic, 4 cloves
  • Mussels, 2lb
Mix all ingredients together and bring them to a boil. Now, add mussels and cover the skillet. Boil for about 4-6 minutes until the shells open.
