Cook up a Storm with Lobsters for Dinner on a Special Occasion

  • 3 tablespoons of crème fraiche (use sour cream if not available)
  • 1 cup of Maine lobster meat, cooked and cut into pieces sized one inch
  • ½ a tablespoon of Shallot, finely chopped
  • White pepper and salt for taste
  • 1 tablespoon of celery, finely chopped
  • 2 hot dog buns
  • Cayenne pepper and lemon juice (optional)
  • ½ a tablespoon each of chives, chervil, fresh tarragon and parsley, finely chopped
  • Some salted butter
To make the rolls first, mix all the ingredients except for the buns and butter together properly and let it sit. Cut the hot dog buns in half. Butter the inner sides of the buns and toast them gently. Once slightly crispy, stuff the buns with the lobster mixture and serve.

  • 2 lobsters (a pound each)

  • The juice of one lemon
  • 2 tablespoons of parsley leaves, chopped

  • 1 halved, pitted and diced avocado
  • Black pepper and salt
  • 8 slices of thick bacon strips, cooked crispy and crumbled
  • 4 split brioche rolls
To make the dish, first, preheat the oven to 400°F. Then, take a large pot of salted water and boil it. Add the lobsters and boil for about eight minutes. Drain properly and shock it in ice water. Once the lobsters are cool, de-shell them and take out as much of the meat as possible. After that, rinse the meat and dice it roughly. Set aside in a big bowl. Then, add the crème fraiche, mayonnaise, lemon juice, parsley, shallots, chives, bacon, avocado, pepper and salt and mix properly. Cover the bowl and put it in the refrigerator. Toast the brioche rolls lightly before stuffing them with the cool lobster mixture.
