Buying a lobster is tricky; one needs to be cautious while purchasing lobsters from marketplace. Prefer fresh and live lobsters, as they are delicious and subtle when prepared. You need to see if the tails are curled up or not, buy the one with flapped tails. Lobsters stored for more than a week is most likely to prepare a foul tasted recipe. You could see bright red shell on fresh lobsters whereas exposed meat is white and moist, and old lobsters have dried and yellow meat.  

Once you have bought the fresh pieces of lobsters, now the storage process also needs to be carried out with care and perfection. After washing the lobsters carefully, refrigerate them by wrapping with freezer paper or plastic bag. A night before cooking, remove them from refrigerator and defrost by placing them in a bowl.
