The marquee event provides an opportunity to the local people to showcase their talent in something “they do best” said the Yarmouth Seafood and Wine Extravaganza committee chairman, Carole Hill Bojarski. She said, “This is all about our community and being together. We never celebrate the best things that we do here. Why don’t we want to celebrate that we have the best seafood in the world?’

For the local branch of the VON at Rudder’s Tent on the water front the weekend begins with a surf and turf fundraiser. The event has been going on for the several years now; the organization has got benefitted since its combination with seafood committee and sale has gone up. From VON office on Starrs Road the tickets for dinner will be available and the dinner time is 5-7p.m.

In Fish Fiesta, on Saturday, 11-2.30 p.m. samplings of local seafood will be provided, prepared and served by community service club and non-profit organizations. Fiesta serves the elements of Fish Feast which was held at Alma Square in association with Seafest. However, the service club and waterfront environment participation has refreshed the theme. The tickets are available at entrance which will be used to purchase samples from seven stations serving different dishes.

It is medium to raise the fund for non-profit organizations like Knights of Columbus and Rotary Club. There will be shrimp, mussel, chowder, barbeque shark and many more. The traditional seafood casserole will be served by Acadian Village. Bojarski said that the organizers wanted to merge the event with Saturday market at Hawthorn Street.

The display will also be hosted by the Department of Fisheries and Aquaculture. The second annual Seafood and Wine Extravaganza show which is an upscale combination of food and wine tasting and cocktail party, will be culminated on Sunday evening at Rodd Grand Hotel and Convention Centre.

The main features of the event are culinary dishes which will be prepared by three celebrity chefs, Digby Pines, David Smart and Mark Gray. Offerings from local restaurants and seafood producers will be joining the chefs which include Bread & Olives Café, Dennis Point Café, The Dinner Plate, The Lobster Shack etc. Bojarski assured that the event will pair all the best seafood and best wine of the region. Treat your Loved Ones to Lip Smacking Shrimp Dishes

Shrimps are one of the most delectable items the sea has to offer and seafood lovers always dig into dishes that are made with shrimp. Shrimp dishes are extremely easy to make even in your own kitchen. One of the most delicious shrimp dishes is the Shrimp, Sausage, and Fish Jambalaya, For this dish you will require:

• ¼ of a cup of butter

 • 1 cup of onion, diced 

• 10 oz of andouille sausages, halved 

• 1 cup of green bell pepper, diced 

 • 1 cup of celery, diced 

• 1 can or six oz of tomato paste 

• 1 ½ teaspoons of garlic, minced 

• 2 teaspoons of Worcestershire sauce 

• 1 can or 14.5 oz of tomatoes, diced

 • 1 ½ teaspoons of Cajun seasoning

 • 4 cups of chicken broth, low-sodium

 • ½ teaspoon of ground black pepper 

• ¾ of a pound of deveined and peeled shrimp

 • 2 cups of medium-grain rice 

• 1/3 of a cup of fresh parsley, chopped 

• ¾ of a pound of cod fillets 

• Salt to taste 

To prepare the dish first take a heavy-bottomed pot and melt butter in it over medium-high flame. Then, cook the andouille sausages in the butter till they are properly brown for around five minutes. Then, take out the sausages with a spoon with slots and place them in a plate with paper towels. In the remaining butter, stir in the bell-peppers, celery and onion; cook till the onion is translucent for about 10 minutes. Add the garlic to this onion mixture and cook for one minute. Then stir in the tomato paste and cook the mixture for about three to five minutes. Then, add the sausages, diced tomatoes, Cajun seasoning, Worcestershire sauce and black pepper and stir in properly. To this mixture, add the chicken broth and bring it to a boil. Combine the rice with the mixture and cover the pot. Keep the flame on medium-low and cook the rice with the shrimp and cod till the rice is tender. Then take off the cover, and cook another 10 minutes with the lid off. Season with parsley and salt and serve the dish.

Since decades lobsters have been serving taste-buds of gourmands. The amazingly delicate flavors of Maine lobsters make them a super favorite everywhere. Being a seafood lover, I am always ready to explore the tasty lobster cuisines. In fact over the years I have grown fonder of lobster snacks; whenever there is tea party at home, I make it a point to serve my guests with crispy snacks that are made from delicious lobster meat. Since I am fond of preparing these delicious lobster munchies, sometimes I feel like sharing a couple of them with my online friends.

Have you heard about the lobster crostini melts? It’s amazingly tasty; so much so that you will feel like having more of these sumptuous treats. Since I am here to share this recipe with you, I won’t talk any extra word and go straight to discuss the lobster snack preparation.

Lobster Crostini melts



Ingredients

• Maine lobster meat (cooked), 2 ½ lb

• Chopped tarragon, 2 tbsp

• Unsalted butter, 3 tbsp

• Cream sherry, 5 tbsp

• Chopped garlic, 3 cloves

• Mayonnaise, 10 tbsp

• Balsamic vinegarette, 2 tbsp

• Grilled French baguette, 16

Chop the lobster meat and keep it in a bowl. Now set it aside. Take a small skillet and melt butter in it. Sauté garlic in it, till the same browns. Now, add the sherry and increase flame to medium. Next, reduce the mixture to half. Remove the garlic mixture from flame. Mix the sherry blend with lobster meat. After this, add the other ingredients and blend thoroughly. Now, spoon the mixture on baguette slice. Add tarragon and then serve the munchies.

Herbed lobster roll


While I was searching for the best lobster snacks in Maine, up came the recipe for herbed lobster roll. Now, I am going to discuss the recipe with all of you.

Ingredients

• Sour cream, 3 tablespoon

• Finely minced tarragon, parsley, chives, chervil and parsley, ½ tbsp

• Chopped shallots, ½ tbsp

• Celery, 1 tbsp

• White pepper and salt for flavor

• Cayenne pepper and lemon juice

• Cooked meat of Maine lobster (sliced into 1 inch piece each)

• Hot dog buns

• Salted butter

Now take all ingredients in a bowl, keeping aside the hot dog buns and salted butter. Combine the mixture and keep it for 20 minutes. Take the hot dog buns and spread butter on split areas. Take a skillet and heat it over medium flame. Now, place the hot dog buns in the skillet, with their butter side down. Brown the buns until they achieve crispiness. Stuff the hot dog buns with lobster mixture and serve it for your evening tea party.

Keeping in mind the seasonal changes and anticipating when harvest can exceed demand, the excess is stored and used when the catch is a little slower.

When the temperatures drop, lobsters become less active. During January to March there is probably no lobstering going on. The peak time for lobster fishing arises again from May and June when the lobsters have more meat.

Seafood has now become a popular cuisine delight for the entire world. Personally I am quite attracted to seafood because they are light and tasty and don’t usually cause any extra fat to accumulate in the body.   • Lemon wedges
For The Sauce:
  • Pecorino Romano, grated

  • White pepper

  • Parsley, chopped
  • Lemon juice
  • Salt
Method:
  • Combine all the ingredients in a bowl and whisk them together for some time.
  • Now you need to reserve it at room temperature grilling it.
  • Well, now the main part of cooking the recipe goes. First of all you need to heat your grill and get it as hot as possible. Yes, you read it right. You need to get it as hot as possible.
  • Now you need to be very careful. Okay do not get nervous. First, shuck oysters and do not lose any of the juices. If you do, then you might not be able to enjoy the dish the way it should be enjoyed.
  • Next you need to place shell side down on the hottest part of the grill.
  • Now, allow the oysters cook in their juices till the edges begin to bubble. Keep doing it for 2-3 minutes.
  • Then, add a scoop of sauce to the top of each oyster to the rim of the shell. Now since the sauce begins to bubble and the edges start to brown, top with a drizzle of cheese and cook for another minute.
  • Next you need to carefully remove the oysters from the grill and top with parsley and serve immediately.
  • Finally you need to serve with a side of lemon wedges and French bread to soak up any and all of the delicious juices.
